Perfect for a cold winter’s day…
Ingredients
- 1 tbsp rapeseed oil
- 1 small onion chopped
- 2 cups of chicken stock
- 1 can diced tomatoes
- 2 tbsp of tomato paste
- 1 cup of coconut milk
- 1/4 cup of fresh basil chopped
- 1 tsp dried basil
Method
- Heat oil on medium heat, add the onion and stir.
- Add the chicken stock, tomatoes, tomato paste and dried basil and bring to the boil.
- Reduce to low heat, cover and simmer for 20 minutes.
- Leave to cool for 10 minutes.
- Blend together, add the coconut milk and reheat.
- Add the chopped fresh basil as a topping.
Serve with a few slices of oat bread 🙂
