Chocolate Chip Chickpea & Cashew Butter Cookies

Ingredients

  • 1 can (15oz) of chick peas, drained and rinsed
  • 1/4 cup raw cashew butter
  • 1/4 cup agave syrup
  • 2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 egg white
  • pinch of salt
  • 1/2 cup chocolate chips

Method

1. Preheat oven to 180°C.

2. Combine all ingredients except chocolate chips in a food processor until just smooth. Do not over-process! Add chocolate chips and mix well with spoon.

3. Scoop dough in heaping tablespoons onto lightly greased cookie sheet and bake for 10-12 minutes until golden/brown.

4. Let them cool for 5-10 minutes.
